This easy tapas is perfect with a beer or glass of wine.

Ingredients
2 tbsp olive oil
1 large shallot, sliced
1 garlic clove, finely chopped
225g Cotswold Cooking Chorizo cut diagonally into 1 inch chunks
1/2 tsp honey
2 fresh bay leaves
Lemon zest, pared
200ml red wine

Method

  • Heat the olive oil in a pan and fry the cooking chorizo for a few minutes to release the oils and crisp up on the cut sides.
  • Turn down the heat a little and add in the shallot and garlic to sweat down. Also add in a couple of bay leaves and a paring of lemon zest.
  • Once the shallot and garlic have softened, and before they begin to colour, add in the red wine and turn up the heat.
  • Add in 1/2 tsp of honey and leave the wine to bubble and reduce.
  • After approx. 5 minutes, the red wine will have reduced to a glossy glaze.
  • Serve the chorizo with a bay leaf and pared lemon and enjoy with a glass of wine or beer.
