A nice layer of soft, creamy fat is left on this sweet loin ham. Locally grown chilli along with fennel, anise and lemon zest give a delicate spicing but it’s the quality of the rare breed pig that sets it apart.

More Details

Inspired by the Spanish cured loin. Lomo, we have used our locally grown chillies along with some toasted fennel, start anise and lemon zest to make a sweet, spicy coating for this ham. We like to leave a good covering of deliciously creamy back fat to contrast with the lean and each loin is marked with our signature cuts along the fat to encourage a little more of the coating into each mouthful. Best served simply with a squeeze of lemon and some caperberries or similar pickles.

Rare breed pork loin (165g used per 100g of finished product), sea salt, fresh chillies, freshly ground spices, dark muscovado sugar, lemon zest, garlic, preservative: potassium nitrate, antioxidant: ascorbic acid

Storage Instructions

Store in a cool, dry place, out of direct sunlight. Once opened refrigerate and consume within 3 days. Suitable for home freezing.
