You can add our Bolognese Booster to your favourite recipe to give you a richer, deeper flavour… or, if you don’t have a favourite recipe, here’s mine.
Ingredients
- 750g Coarsely ground beef (not too lean)
- 1 onion - diced
- 1 carrot - diced
- 1 stick celery - diced
- 3 cloves garlic – finely chopped
- 400g tin chopped tomatoes
- 100g SaltPig Bolognese Booster
- 150ml red wine
- 400ml milk
- 200ml stock (beef or chicken – if you don’t have, replace with milk)
- 50ml olive oil
- 75g butter
Method
Step 1
Take a heavy bottomed pot large enough to fit all the ingredients and heat half of the oil in it. Add the beef and break it up. Cook on a high heat until it has browned all over. Set beef aside.
Step 2
Add the remaining oil and the butter along with the onions, carrots and celery. Scrape up any bits of beef stuck to the base of the pan. Sweat until softened (at least 15mins).
Step 3
Add the tomatoes and continue to cook at a medium temperature for a while to reduce and sweeten the tomato.
Step 4
Add the beef back in and all remaining ingredients. Bring to a simmer and then turn it down so it barely bubbles. Leave it like this for 3-4 hours stirring occasionally. You may need to top it up with a little water as you go along but the finished sauce should be thick and rich.
